Inside the Flavor Lab: How a DPM Flavor Is Born

What do you get when you mix a brainstorm, a spice rack, a chaotic lunch shift, and one wild idea involving stroop and sambal?

Welcome to the Flavor Lab – the place where our next pancake stars are born. It’s loud. It’s messy. And it’s where magic happens.

Season’s calling and we answer in toppings

It usually starts with a nudge from the boss or one of the chefs: “Shouldn’t we start thinking about winter?”
Next thing you know, the flavor gates burst open.

Everyone joins in – marketing, the servers, the dishwasher, even that one regular guest who swears by brie and cranberries.
Ideas come from everywhere: your cravings, grandma’s cooking, what’s trending on TikTok, or that strange-but-genius combo you tried at 2am last Saturday.

This time? We’re heading into the colder months. That means cinnamon, roasted things, creamy sauces, heartier bites… and maybe something cheeky for Sinterklaas. Or sparkly for Christmas.

Welcome to the testlab

Once we’ve gathered enough wildcards, the kitchen takes over.

Our chefs roll up their sleeves and start testing. They look at structure, flavor layering, heat, prep time, plating, cost – and of course: does it slap?

The testing phase is pure chaos. Pancakes fly, sauces drip, spices clash and kiss, and someone always tries to sneak chocolate into something savoury.

Every now and then, a new pancake is passed through the window – and anyone nearby becomes an instant critic.
The boss. The kitchen crew. That delivery guy dropping of strawberries. No one is safe from the question:
“Quick. Try this. Yes or no?”

The crowd decides

Not every combo makes the cut. Some are just too wild. Others are brilliant, but too complex for the heat of service.

The final winners?
They’re the ones that:

  • Make people say “Wow” on the first bite.
  • Fit the rhythm of our kitchen.
  • Keep the team excited and the guests coming back.
  • That look that says; “Yummmm”

Those lucky pancakes earn a temporary spot on the menu – and who knows, maybe even a permanent place in our hearts (and yours).
