Apple or bacon? Syrup or powdered sugar? And if you’ve ordered one of our more ambitious creations, where exactly are you supposed to start?

But there is one question that doesn’t get nearly enough attention.

What do you drink with it?

The answer is wonderfully unhelpful: it depends.

There is no official Dutch pancake drink, no centuries-old rule and certainly no pancake sommelier hiding somewhere in Amsterdam. What ends up in your glass depends on the pancake, the occasion and, perhaps most importantly, who’s sitting around the table.

And to understand that, we need to start at home.

Pancake Night at the Dutch Kitchen Table

For many Dutch people, pancakes are tied to memories of eating them at home. Not for breakfast, but for dinner.

One person would stand at the stove baking pancake after pancake while the rest slowly disappeared from the stack. Syrup and powdered sugar were on the table, perhaps some apple, cheese or bacon was involved, and everyone had their own very specific idea of what belonged on the next one.

The drinks were usually just as uncomplicated. For children, milk was a familiar choice, while coffee or tea was never far away for the adults. Pancake night wasn’t supposed to be a culinary event with carefully considered pairings. It was simply dinner.

And that simplicity is part of the charm.

Coffee Has Entered the Chat

Of course, coffee deserves its own paragraph because we’re talking about the Netherlands.

With a sweeter pancake, coffee is an easy match. Apple and cinnamon, fruit, chocolate or something involving a generous amount of whipped cream all work nicely with the slight bitterness of coffee. It cuts through some of the sweetness and, more importantly, gives you a perfectly good reason to stay at the table a little longer.

Tea works in much the same way, especially if you’re after something lighter.

Nothing revolutionary so far.

Don’t worry. There’s beer coming.

When Pancakes Meet Beer

Once you move away from the family kitchen table and crispy bacon, cheese or other savoury toppings enter the picture, a cold beer suddenly makes a lot of sense.

The bitterness and carbonation can work well against richer, saltier flavours, making beer a very happy companion to a savoury Dutch pancake.

Is beer with pancakes an ancient Dutch tradition?

Not particularly.

But neither is checking Instagram before your pancake gets cold, and here we are.

Some traditions evolve.

And Then There Are Cocktails

At Dutch Pancake Masters, pancake night doesn’t necessarily happen at night.

You’re in Amsterdam. You may have walked halfway across the city already, it might be eleven in the morning or four in the afternoon, and nobody is going to ask why there’s a cocktail next to your pancake.

That gives us considerably more room to play.

A fresh cocktail can balance a rich or savoury pancake, while something sweeter can turn an already indulgent pancake into a full commitment to dessert. And frankly, if you’re sitting in Amsterdam with a Dutch pancake in front of you and a cocktail in your hand, we struggle to see the problem.

So, What Should You Drink With a Dutch Pancake?

The most Dutch answer might simply be: whatever you like.

A glass of milk belongs to childhood pancake nights. Coffee and tea fit naturally beside something sweet. Beer works beautifully once bacon or cheese gets involved. And cocktails?

Well, grandma didn’t serve them with pancake night.

We’ve made some progress since then.

There really isn’t one correct drink because there isn’t one correct Dutch pancake either. That’s part of what makes them so good. Sweet, savoury, simple or completely loaded, you get to decide what belongs on your plate and what goes in your glass.

We just take care of the pancake.

There are some very important decisions to make when eating a Dutch pancake.
