Here’s How to Make a Real Traditional Dutch Pancake at Home

You’re back home.

Suitcase unpacked, photos uploaded, and somehow… everything feels just a little bit quieter than Amsterdam. No bikes rushing past, no canals outside your window, and definitely no warm Dutch pancakes waiting for you at the table.

And then it hits you.
That one meal you didn’t think much about at the time, but now can’t stop thinking about.

The pancake.

Not the fluffy kind. Not a stack drowning in syrup.
The real one. The Dutch one.

So if you’ve just returned from “Europe”, or more specifically, the Netherlands, and you’re wondering how to recreate that experience at home, this is where you start.

Where Dutch pancakes actually come from

Dutch pancakes don’t come from brunch culture. They don’t belong to cafés with mimosa menus or slow Sunday mornings.

They come from home kitchens.

Traditionally, pancakes in the Netherlands are dinner. They are what you make on a weekday evening when everyone is home and hungry. A recipe built on basics: flour, milk, eggs, and whatever you have on hand.

It’s practical food. But it turns into something much more than that.

Because it’s never just one pancake.

How we actually eat them

If you’ve ever been in a Dutch kitchen on pancake night, you’ll recognise the rhythm.

One person stands by the stove, flipping.
The stack slowly grows, pancake by pancake.
A plate waits nearby, often kept warm in the simplest way possible, sometimes even over a pan of hot water, just to keep everything ready to serve.

At the table, everyone waits (impatiently), discussing toppings, claiming favourites, negotiating combinations.

And then, finally, your pancake lands on your plate.

That’s when the real ritual begins.

The roll (and when not to)

A traditional Dutch pancake is made to be rolled, at least, the classic ones are.

You take your knife and fork, add your topping, and roll it up into a soft, warm cylinder that holds everything together. It’s practical, satisfying, and something most Dutch people learn without ever being taught.

But not every pancake is meant to be rolled.

Once you start adding more generous toppings, crispy bacon, melted cheese, baked apple, raisins, the pancake becomes something else. Something fuller. Something layered.

At that point, you don’t roll it.
You work your way through it.

Both ways are part of the tradition.

The recipe (the real one)

If you want to recreate a proper Dutch pancake at home, keep it simple, but get the ratios right.

This recipe makes about 16 pancakes, depending on the size of your pan.

Ingredients:

500g all-purpose flour

4 eggs

1000ml milk

A pinch of salt

Butter (for baking)

Method:
Whisk the flour, eggs, milk and salt into a smooth batter. Make sure there are no lumps, the batter should be pourable but not too thin.

Let it rest for about 10–15 minutes if you have the time. It helps the texture.

Heat a pan over medium heat and melt a small knob of butter. Pour in enough batter to cover the base in a thin, even layer.

Now comes the moment most people rush…and shouldn’t.

Let the pancake cook until the edges turn golden and you start to see small bubbles forming on the surface. Those little holes are your sign that it’s ready to flip.

Turn it, cook the other side until lightly golden, and you’re good to go.

Chef’s tip (and a little Dutch truth):
your first pancake will probably fail. Too thick, too pale, slightly torn, it happens to everyone. Consider it a test run. By pancake number two, you’ll feel the rhythm. By number three, you’ll start getting confident.

And by number sixteen? You’ll understand why we do this so often.

The toppings that actually matter

This is where most people get it wrong.

A Dutch pancake isn’t about random combinations. It’s about balance, flavours that have worked for generations.

Crispy bacon with syrup; salty and sweet, perfectly combined

Cheese baked into the batter; added early, so it melts into the pancake itself

Apple, cinnamon and raisins; soft, warm and slightly caramelised

Plain with the real Dutch powdered sugar or syrup. Simple, but never boring

If you really want to get it right, bring home a bottle of stroop or proper powdered sugar from your trip. It won’t taste the same otherwise.

Trust us on that one.

What most people get wrong

If your pancake doesn’t taste quite right, it’s usually one of these:

It’s too thick

It’s treated like a crêpe

It’s flipped too early

It’s overloaded without structure

A Dutch pancake is confident. It holds its shape. It carries flavour without falling apart.

That balance is everything.

One last thing

You can absolutely recreate this at home.

You can get close to the texture, the flavour, even the smell of butter in the pan.

But the full experience?
The stack on the table, the shared moment, the slightly chaotic energy of pancake night?

That’s harder to pack into your suitcase.

So make them at home. Roll them. Top them properly.

Or… just come back and let us do the flipping.

You’re back home.
